Buttermilk Soda Biscuits
Ingredients
2 - cups flour, sifted
1/2 - teaspoon baking soda
1/2 - teaspoon salt
4 - tablespoons shortening
3/4 - cup buttermilk
Directions
Preheat oven 350 degrees. Sift together flour, baking soda, and salt. Cut in shortening with knives or cutter. Add buttermilk to make a soft dough.
Knead 1 minute. Pinch off biscuit-size pieces and flatten and mold with hands
Bake 15 minutes or until golden brown.

California Onion Dip
Ingredients
8 oz. softened cream cheese
1 very lrg. onion (yellow or white)
2 Tbs. vegetable oil
2 cups sour cream
1-1/2 Tbs. Worcestershire sauce
Tabasco sauce to taste
1 Tbs. dried parsley flakes
Preparation
Peel and slice 1 large onion and caramelize it in 2 tablespoons vegetable oil on low heat. Let cool. In a blender, food processor or with portable electric mixer, blend the onion with 8 ounces of softened cream cheese, 2 cups of sour cream, 1-1/2 tablespoons Worcestershire sauce, Tabasco sauce to taste and 1 tablespoon dried parsley flakes. Blend until smooth.

Red Potato Salad
Ingredients
3 - pounds red potatoes
1 - white onion, chopped
3 - celery stalks, chopped
3 - bacon strips, fried and crumbled
1/4 - cup black olives, chopped
2 - tablespoons sweet relish
Directions
Boil potatoes in pot until tender. Do not peel the skins. Allow the potatoes to cool. Cut into 1/2 inch cubes and place in large mixing bowl.
Add onion, celery, bacon, black olives and sweet relish. Lightly mix the ingredients. Then add the dressing and toss lightly to coat ingredients.
Chill until ready to serve.

New England Coleslaw
Ingredients
1 small head cabbage, shredded fine
1/2 sup heavy cream, whipped
1/2 cup sugar
1/2 cup vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Beat sugar into shipped cream, then beat in vinegar.
Pour over shredded cabbage. Season with salt and pepper and stir well. Chill until ready to serve.

Sautéed Flank Steak with Honey-Mustard Sauce
Ingredients
2 - tablespoons butter
2 - pounds flank steak, sliced
1/2 - cup sour cream
1/2 - teaspoon dry mustard
1/2 - teaspoon honey mustard
1/2 - lemon, juice
1/4 - teaspoon salt
1/8 - teaspoon pepper
Directions
Sauté flank steak in butter. When cooked to your preferred doneness, place on warm plate. In the sauté pan, add cream, dry and honey mustards, lemon juice, salt and pepper. Stir until warm. Pour sauce over flank steak and serve.

Cider Punch
Ingredients
2 - quarts sweet apple cider
2- cups orange juice
1 - cup lemon juice
1 - stick cinnamon
1 - teaspoon cloves
Directions
Mix all ingredients together in large pot. Heat, but do not boil. Chill in refrigerator.

Vienna Apple Cake
Ingredients
1 egg yolk
2 tbsp. cold water
Dash of salt
Juice of 1/2 lemon
1/2 cup butter
1 cup sifted flour
1 tsp. Baking Powder
3 large apples
1/4 cup raisins
1/3 cup almonds
1 egg beaten
1 tsp. Lemon extract
Directions
Beat together egg yolk, water, salt and lemon juice. Cream butter, blend into first mixture, add flour. Divide dough in half. Roll one piece out thin and fit into greased pan, 12 x6 inches. Peel and core apples and chop fine with raisins and almonds. Spread mixture over dough in pan, top with remaining dough rolled out thin. Brush with beaten egg. Bake in 400 degree over about 45 minutes. |
